Satay Peanut Butter Chicken Skewers

We love using our air fryer during the summer, especially when it comes to peanut butter chicken skewers. Indoor cooking never tasted so good.
Serves: 4
Ingredients
QUICK PEANUT SAUCE:
  • ½ cup Creamy Peanut Butter
  • 2 tbsp. Liquid Aminos
  • 1 tbsp. Maple Syrup
  • 3 tbsp. Lime Juice
  • 1 tsp. Gochujang (or red chili sauce)
  • 2 Garlic Cloves, minced
  • ¼ cup Hot Water, or more if desired
CHICKEN SATAY MARINADE:
  • 1 tbsp. Vegetable Oil
  • 2 Garlic Cloves, minced
  • 1 tsp. Turmeric Powder
  • 1 tsp. Coriander
  • ½ tsp. Chili Powder
  • ½ tsp. Salt
  • 2 lbs. Springer Mountain Farms Chicken Thighs, cut into chunks
  • 6 - 8 Bamboo Skewers, soaked in water
FOR PLATING:
  • 2 Ramen Noodle Bags, cooked and drained
  • ¼ cup Chopped Peanuts
  • ¼ cup Fresh Cilantro, chopped
  • 4 Lime Wedges, optional
Instructions
  1. Whisk together all the ingredients for the peanut sauce and set aside in the refrigerator until you're ready to serve.
  2. Cut the chicken into smaller chunks and marinate with the oil, garlic, and spices listed. When you're ready to cook, thread the chicken onto bamboo skewers that have been soaked in water.
  3. Preheat the air fryer to 390F. Cook the skewers for 12 minutes, making sure to flip halfway through. The internal temperature will be 165F when they are finished. Adjust timing accordingly, depending on what air fryer brand you have.
  4. While the chicken is in the air fryer, cook the ramen according to its packaged directions and drain before plating.
  5. Serve the chicken over a bed of ramen and sprinkle with chopped peanuts and cilantro. You can also add lime wedges on the side, if desired.
