Ground Beef Soup with Veggies

I'm a huge fan of Ground Beef Soup. There's so many creative options! This veggie base is savory, satisfying, and surprisingly healthy!
Serves: 10
Ingredients
  • 1.3 lbs. Lean Ground Beef
  • 4 Carrots, peeled and chopped
  • 1 Yellow Onion, chopped
  • 4 Stalks of Celery, thinly sliced
  • 6 Garlic Cloves, minced
  • 6 Parsnips, chopped
  • 28 oz. Diced Tomatoes
  • 2 cups Quinoa
  • 8 cups Beef Bone Broth
  • 1 tsp. Salt
  • 1 tsp. Pepper
  • Juice from 1 Lemon
  • Fresh Parsley, to garnish
Instructions
  1. Brown the ground beef in a large stock pot over medium heat. Remove with a slotted spoon and set aside.
  2. In the same pot, add the carrots, yellow onion, celery, garlic and parsnips. Sauté until slightly softened and fragrant.
  3. Add the canned tomatoes, quinoa, and beef bone broth. Simmer for 20 minutes with the lid slightly covering.
  4. Squeeze in the lemon juice, add salt and pepper. Mix and taste, adjusting seasoning, if needed. Serve with fresh parsley for garnish.
