Creamy Mushroom Sauce for Legit Everything

Not kidding... I enjoy this creamy mushroom sauce on its own, with bread, over steak, chicken, veggies... it's THAT freaking grand!
Serves: 2
Ingredients
  • 2 tbsp. Unsalted Butter
  • 2 tbsp. Olive Oil
  • 12 oz. Baby Bellas, sliced
  • 1 Shallot, minced
  • 2 Garlic Cloves, minced
  • ½ cup Dry Red Wine
  • ½ cup Chicken or Veggie Stock
  • ¼ cup Sherry Vinegar
  • ¼ tsp. Dried Thyme
  • 1 tsp. Dijon Mustard
  • ⅔ cup Heavy Cream
  • 1 tbsp. Cornstarch + 1 tbsp. Water, mixed together
  • Salt + Pepper, to taste (optional)
Instructions
  1. Add 2 tablespoons of butter and the olive oil to a large skillet over medium heat. Once melted and bubbly, ad the sliced mushrooms and cook until browned. Then add the sliced shallots and continue cooking until softened. Next, add the garlic and sauté until fragrant (about 30 seconds).
  2. Pour the wine into the pan and make sure to scrape the bits from the bottom while deglazing. Pour in the sherry vinegar, stock, dried thyme, and dijon mustard. Bring to a boil and simmer for 5 minutes. Next you'll drizzle in the heavy cream and cornstarch mixture.
  3. Simmer for another 5 - 6 minutes, or until sauce has thickened.
  4. Serve immediately over your preferred protein, veggies or served on its own with bread.
