When it comes to brunch, I love serving at least one dish that can be shared and passed around. This Shakshuka recipe is simply marvelous!
Serves: 4
Ingredients
FOR THE SHAKSHUKA:
  • 1 lb. Ground Sausage
  • ½ Yellow Onion, chopped
  • 1 Red Bell Pepper, chopped
  • 3 Garlic Cloves, minced
  • 2 tbsp. Harissa
  • ¼ tsp. Cayenne Pepper
  • ½ tsp. Ground Cumin
  • ½ tsp. Paprika
  • Pinch of Kosher Salt + Black Pepper
  • 28 oz. can Crushed Tomatoes
  • 1 - 2 cups Fresh Spinach, as desired
  • 3 Eggs
  • 1 Baguette, sliced
  • Olive Oil, optional for toasting bread
RECOMMENDED GARNISHES:
  • 4 oz. Feta Cheese, crumbled
  • 1 Avocado, sliced
  • Fresh Italian Parsley
  • Microgreens
  • Edible Flowers
  • Red Pepper Flakes
Instructions
  1. Crumble the ground sausage into a large skillet over medium heat. Sauté until slightly browning, about 10 minutes. Add the onion, red pepper and continue to cook until softened, about 5 minutes.
  2. Add garlic, harissa, seasonings, and salt + pepper. Stir and cook for 1 minute, until fragrant. Add crushed tomatoes and fold-in the spinach. Simmer for 10 - 15 minutes, uncovered. The sauce will slightly thicken.
  3. While the sauce simmers, slice and toast the baguette.
  4. When the sauce is ready, make three wells and crack in the eggs. Cover and cook until the eggs are set to your desired consistency. This will take between 4 - 6 minutes.
  5. For maximum flavor, top the entire skillet with recommended garnishes and serve immediately with toasted baguette.
