Looking for a queso dip recipe to serve up this Cinco de Mayo? This melty cheese dip is always a crowd pleaser, so make sure you've got lots of chips on hand for scooping!
Serves: 8
Ingredients
  • 8 oz. Cheddar Cheese Block, shredded
  • 1 tbsp. Cornstarch
  • 2 tbsp. Butter
  • ½ cup Yellow Onion, minced
  • 1 Jalepeno Pepper, seeded and diced
  • 2 Garlic Cloves, minced
  • 2 Roma Tomatoes, diced
  • 1½ tsp. Salt
  • ½ tsp. Ground Cumin
  • ½ tsp. Cayenne Pepper
  • 12 oz. Can Evaporated Milk
  • 4 oz. Can Diced Green Chiles
  • ¼ cup Fresh Cilantro, chopped
  • Chips for Serving
  • Pickled Jalapeños, optional garnish
Instructions
  1. Melt butter in a medium-sized saucepan over medium-high heat. Add minced onion, fresh jalapeño pepper, and cook for 3-4 minutes, until softened.
  2. Reduce heat to medium. Add garlic, tomato and cook for 1-2 minutes. Stir in salt, cumin, and cayenne pepper.
  3. Add the evaporated milk, cornstarch, and cheese. Fold-in the green chiles.
  4. Continue stirring until the cheese melts completely.
  5. Remove from heat and stir in cilantro. If desired, garnish with pickled jalapeños for a little added heat!
