Sweet 'n Spicy Balsamic Blistered Tomatoes with Burrata

The viral feta craze has taken the world by storm. Let's give burrata a some lovin', served with balsamic blistered tomatoes and fresh herbs.
Serves: 4
  • 8 oz. Burrata
  • 2 Cherry Tomato Clamshells
  • 6 Garlic Cloves, smashed
  • 1 Tbsp. Olive Oil
  • 2 Tbsp. Balsamic Vinegar
  • ½ tsp. Dried Oregano
  • 2 tsp. Dried Red Pepper Flakes, optional
  • Salt + Pepper, to taste
  • Fresh Italian Parsley and Basil, to garnish
  • Pesto, for serving
  1. Preheat oven to 400F.
  2. Add tomatoes and garlic to a roasting dish and pour over olive oil, balsamic vinegar, dried oregano, red pepper flakes and salt + pepper. Shake to combine.
  3. Bake for 30 minutes, or until tomatoes have blistered and are splitting. Remove from oven and set aside.
  4. Spoon blistered tomatoes onto a serving platter and top with burrata, pesto and crostini. Enjoy immediately.
