Crunchy Gouda Air Fryer Eggplant Fries

These Air Fryer Eggplant Fries are breaded with aged gouda, panko and seasonings, then air-fried until perfectly golden. Easy and scrumptious!
Serves: 2
  • 1 Eggplant
  • 2 Large Eggs, whisked
  • 1 cup Grated Aged Gouda Cheese
  • 1 cup Panko Bread Crumbs
  • 2 tsp. Italian Seasoning
  • 1 tsp. Garlic Powder
  • Marinara, optional for serving
  • Italian Parsley, optional for serving
  1. Cut off both ends of the eggplant and discard. Cut the eggplant, lengthwise into ½ inch slices. Then cut them into strips. Last, cut the strips in half to create the shape of fries.
  2. Preheat the air fryer to 375F. Whisk eggs in a small bowl and set aside. Mix gouda, panko, Italian seasoning and garlic powder in a separate bowl and set aside.
  3. Dip the eggplant into the eggs, then coat in the gouda-panko mixture.
  4. Arrange the eggplant fries in a single layer on a parchment-lined air fryer tray.
  5. Air fry for five minutes, rotate trays and air fry for an additional five minutes. Depending on the size of your air fryer you may have to cook in batches.
  6. Enjoy immediately with your favorite dipping sauce.
