Broccoli Slaw
 
 
Serves: 6
Ingredients
  • 2 bunches of Broccoli (crowns & stems), finely chopped
  • 1 Carrot, peeled & minced
  • 2 tbsp Mayonnaise
  • ½ cup Greek Yogurt
  • 1 Lemon, zested
  • ¼ Red Onion, chopped
  • 2 cloves Garlic, chopped
  • 1 tbsp Apple Cider Vinegar
  • 1 tsp Granulated Sugar
  • 2 tbsp fresh Parsley, chopped
  • S+P to taste
Instructions
  1. Mix all ingredients together in a large bowl.
  2. Set in refrigerator and let flavors blend for at least two hours before serving.
  3. Some yummy add-in's include: ½ cup chopped Bacon, ¼ cup Sunflower Seeds, ¼ cup slivered Almonds and a bag of crushed Ramen Noodles.
