Broccoli Slaw
- 2 bunches of Broccoli (crowns & stems), finely chopped
- 1 Carrot, peeled & minced
- 2 tbsp Mayonnaise
- ½ cup Greek Yogurt
- 1 Lemon, zested
- ¼ Red Onion, chopped
- 2 cloves Garlic, chopped
- 1 tbsp Apple Cider Vinegar
- 1 tsp Granulated Sugar
- 2 tbsp fresh Parsley, chopped
- S+P to taste
- Mix all ingredients together in a large bowl.
- Set in refrigerator and let flavors blend for at least two hours before serving.
- Some yummy add-in's include: ½ cup chopped Bacon, ¼ cup Sunflower Seeds, ¼ cup slivered Almonds and a bag of crushed Ramen Noodles.
